Orange and maple braised red cabbage

Background
Christmas dinner is not complete without braised red cabbage! It can be made in advance - even days before, so you just need to heat it up before serving. This orange and maple braised red cabbage is a boozy version – not suitable for young children!
Ingredients
- 1 small head red cabbage
- 1 red onion
- 1 green apple
- 1 glass of white wine
- 1 orange, zested and juiced
- 2 Tbsps of orange liqueur
- 2 Tbsps muscovado sugar
- 2 Tbsps of maple syrup
- Salt and pepper
- 1 Bay leaf
- Orange liqueur (such as Cointreau)
Instructions
- Shred or thinly slice the cabbage and onion, then scatter them into a saucepan. Add all other ingredients, then gently simmer for 25-30 minutes or until the cabbage has become tender.
- If the sauce hasn’t reduced, turn up the heat and reduce it to almost nothing.
- Discard the bay leaf and stir in a spoonful of more liqueur
- Keep it warm under a lid until you’re ready to serve.
