Orange and Poppy Seed Muffins

Background
These easy-to-make orange and poppy seed muffins are ideal morning or afternoon snacks -Β also perfect for parties, picnics and special occasions. I reduced the sugar content of the original recipe, but if you have a sweet tooth, add some more!
Ingredients
- 150 ml milk or almond milk
- 1 Tbsp poppy seeds
- 350g flour
- 1 tsp baking powder
- 100g unrefined cane sugar
- 100g butter or margarine
- 2 eggs
- 1 organic orange (grated zest and juice)
Instructions
- Soak the poppy seeds in 50 ml milk.
- Melt the butter, let it cool.
- Preheat the oven to 190Β°C. Line a muffin tin with paper cases.
- In a large bowl, mix the flour, sugar and baking powder .
- In another bowl, beat the eggs slightly and add the remaining milk, orange zest and juice, then stir in the melted butter and poppy seeds soaked in milk.
- Add the egg mixture to the flour, gently combine.
- Fill the muffin cases with the batter.
- Bake the muffins for about 20-25 minutes, until golden then transfer them to a wire rack to cool.
