Pasta with vegan spinach and walnut pesto

Background
I made this pasta with vegan spinach and walnut pesto using gluten-free fusilli, but other dried pasta can be used too. The dish is vegan but vegetarians can make it with normal feta cheese too. The dish is ready in just 10 minutes so it's perfect on busy or lay days.
Ingredients
- 200g pasta of your choice
- 2 cloves of garlic
- 1 tsp olive oil
- Β½ tsp chilli flakes
- 100g spinach
- 50g vegan feta cheese
- 2 Tbsp chopped parsley
- 1 handful walnuts
- To serve: chopped
Instructions
- Cook the pasta according to the packet instructions, drain and keep warm.
- Meanwhile, slice the garlic, then gently sautΓ© it in the oil, together with the chilli flakes.
- Rinse the spinach and add to the garlic. Add a couple of spoonful of the pastaβs cooking water, then put a lid on and steam for about 5 minutes over low heat.
- When the spinach has wilted, transfer it to a small food processor, add the walnuts, parsley and the vegan feta, then blend until you get a slightly textured sauce. Season with salt and pepper, then mix with the pasta.
- Fold in the rocket leaves, then serve immediately, garnished with chopped walnuts and crumbled feta.
