Pea and halloumi fritters
Background
I had a friend round for an impromptu drink, so I wanted to create some quick and easy fritters that were gluten-free too. I found some peas in the freezer and Β some halloumi in the fridge, so I came up with this super-easy recipe!Β The resulting pea and halloumi fritters were really yummy, delicate and rather filling actually!
Ingredients
- 150g peas
- 1 egg
- 1 handful of basil/mint leaves
- 100g halloumi, coarsely grated
- 1 garlic clove, minced
- 3 Tbsp buckwheat/rice flour
- 1Tbsp milk (approx.)
Instructions
- Defrost the peas by pouring hot water over them, then drain.
- Put the peas, egg, garlic, herbs into a blender and whiz until smooth.
- Add the flour and a dash of milk to get a thick but spreadable batter.
- Heat some oil in a frying pan, then add dollops of the batter, letting them spread into circular shapes.
- Cook for a couple of minutes, then flip them and cook until golden on each side.
- Make another batch using up the batter.
Tips
For a low-carb version use chickpea (gram) flour!Categories
