Pear, fig and goat's cheese salad

Background
This pear, fig and goat's cheese salad is perfect for a light lunch or you can serve it as a starter at a dinner party. It's very easy to make and is ready in justΒ 15 minutes.
Ingredients
- 4 ripe figs
- 50g walnut
- 2 pears
- 150g goats' cheese
- 1 pack of mixed salad leaves (100g)
- Dressing: juice of half a lemon, 2 Tbsp olive oil, 0.5 tsp Dijon mustard, 1 tsp honey,
Instructions
- Line a baking tray with baking paper.
- Quarter the figs, break the walnut kernels into small pieces and break the goat's cheese into rough pieces by hand.
- Arrange the figs on the baking sheet, then scatter around them the goat cheese and walnut pieces. Drizzle with a little honey.
- Place the tray under a medium grill for about 5 minutes.
- When the walnuts are golden, the figs are soft, and the cheese is melted, remove the tray from oven and allow it to cool slightly.
- Core and slice the pears. Mix the dressing, season to taste.
- Sprinkle the lettuce leaves on 4-6 plates and arrange the cheese, figs, toasted walnuts and pear slices on top.
- Drizzle with the dressing before serving.
