Peas with Little Gem and Mint

Background
This recipe combining peas with little gem and mint is really easy to make - it takes only 5 minutes! It's a lovely, healthy side dish that goes particularly well with roast lamb or grilled lamb chops.
Ingredients
- 1 Tbsp olive oil
- 5 spring onions
- 100 ml vegetable stock
- 1 little gem or baby romaine lettuce
- 250g green peas
- 1 Tbsp chopped mint leaves
Instructions
- Chop the spring onion crosswise.
- Heat the oil in a saucepan, cook the onion for a couple of minutes until soft. Add the vegetable stock and the peas. Cook for about 3 minutes until soft.
- Meanwhile, chop the mint leaves. Cut the little gem lengthwise into 4 wedges.
- Add the lettuce wedges and mint to the peas then stir through
- Serve warm.
