Pork medallions in honey and garlic sauce

Background
These pork medallions in honey and garlic sauce are ready within 15 minutes, so ideal for quick suppers and even laid-back dinner parties. Serve with a mash orΒ rice andΒ steamed/stir-fried veggies on the side.
Ingredients
- 1 pork tenderloin
- 1 Tbsp olive oil
- 2 cloves of garlic, minced
- 2 Tbsp rice vinegar
- 1 Tbsp Rice wine
- 2 Tbsp soy sauce
- 2 Tbsp honey
- For the rub:
- Β½ tsp garlic powder
- Β½ tsp paprika
- Salt & pepper
Instructions
- Cut the fillet into 1cm thick medallions.
- Put the garlic powder, paprika and some salt&pepper into a freezer bag. Add the medallions and shake the bag well so all of them get well coated. Chill until youβre ready to cook.
- Heat the oil in a large frying pan, then sear the medallions on each side.
- Add the soy sauce, vinegar and rice wine, cover and cook over low heat for 2 minutes. Add the honey and turn over the medallions. Cook for another couple of minutes until the sauce has reduced into a thick glaze. Don't overcook the pork!
- Serve immediately with the glaze.
