Potato and lentil curry

Background
This potato and lentil curry is a very simple curry, containing both sweet and normal potatoes. It's mildly spicy, hearty and super healthy! Perfect for vegetarians, vegans or for the generally health-conscious. Serve with basmati rice!
Ingredients
- 2 Tbsp vegetable oil
- 200g sweet potatoes
- 150g skinless potatoes
- 100g green or brown lentils
- 1 large onion
- 2 cloves of garlic
- 1 green chilli (deseeded and feeling)
- 1 tsp ground ginger
- 1 tsp Garam Masala
- 200 ml vegetable stock
- Salt, pepper
Instructions
- Peel then cut the potatoes into 2-3cm cubes. Put them in a pan of cold water, bring to the boil, then drain.
- Meanwhile peel and cut the sweet potatoes into cubes of similar size and fry these in the oil for 5 minutes. Transfer them to a mixing bowl.
- Chop the onion, garlic, chilli and add the oil with the ground ginger. Stir for a minute them put back the sweet potatoes. Add the potatoes, lentils, garam masala, and pour the stock over.
- Bring to the boil, then cook gently under cover for 20-25 minutes until the vegetables are tender. If necessary, add more water.
- Serve hot.
