Potato salad with onion and anchovies

Background
This potato salad with onion and anchovies is the perfect accompaniment for roasted or barbecued fish or lamb.Β It can be eaten warm or cold - so Β it's ideal for Summer parties and picnics. Also it's very easy to make!
Ingredients
- 1 kg medium-sized potatoes (waxy )
- 4 Tbsp olive oil
- 1 Tbsp lemon juice
- 8 slices of anchovy in oil
- 1 red onion
- 1 handful parsley, chopped
Instructions
- Rinse & rub the potatoes. Cook in lightly salted water until tender.
- Drain and cut into bite-sized pieces if they are big.
- Put them in a serving dish and drizzle with the oil and lemon juice.
- Cut the onion in half, slice into thin strips, then add the potatoes .
- Cut the anchovy slices lengthwise into thin strips, add to the salad. Season to taste.
- Sprinkle with chopped parsley just before serving .
