Background

This potato salad with onion and anchovies is the perfect accompaniment for roasted or barbecued fish or lamb. It can be eaten warm or cold - so it's ideal for Summer parties and picnics. Also it's very easy to make!

Ingredients

1 kg medium-sized potatoes (waxy )
4 Tbsp olive oil
1 Tbsp lemon juice
8 slices of anchovy in oil
1 red onion
1 handful parsley, chopped

Instructions

Rinse & rub the potatoes. Cook in lightly salted water until tender.
Drain and cut into bite-sized pieces if they are big.
Put them in a serving dish and drizzle with the oil and lemon juice.
Cut the onion in half, slice into thin strips, then add the potatoes .
Cut the anchovy slices lengthwise into thin strips, add to the salad. Season to taste.
Sprinkle with chopped parsley just before serving .
