Background
Puffed rice Upma is a South Indian easy to make breakfast dish. It is healthy and delicious, so I make it at least twice a month.
Ingredients
- Puffed rice 4 cups (washed and soaked in water for 3 minutes)
- 1 big onion finely chopped
- ΒΌ tsp turmeric powder
- 1 tsp coriander powder
- Β½ tsp mustard seeds
- Β½ tsp cumin seeds
- 2 green chillies chopped
- 1 tbs oil
- 2 springs curry leaves
- 1 tsp lime juice
- Handful of coriander leaves for garnishing
Instructions
- Drain the soaked puffed rice by squeezing the extra moisture out and transfer to a plate.
- Heat oil in a pan. Add mustard seeds,cumin seeds and sautΓ© until the seeds splutter.
- Add chopped onion,green chillies and curry leaves. Saute well till the onion turn translucent.
- Add turmeric powder,coriander powder and salt to taste. Mix well.
- Add the soaked puffed rice and sautΓ© on low flame so that the rice gets coated well with all the ingredients.
- Finally add lime juice and mix well. Transfer to a serving bowl and garnish with coriander leaves.
