Background

Puffed rice Upma is a South Indian easy to make breakfast dish. It is healthy and delicious, so I make it at least twice a month.

Ingredients

Puffed rice 4 cups (washed and soaked in water for 3 minutes)
1 big onion finely chopped
¼ tsp turmeric powder
1 tsp coriander powder
½ tsp mustard seeds
½ tsp cumin seeds
2 green chillies chopped
1 tbs oil
2 springs curry leaves
1 tsp lime juice
Handful of coriander leaves for garnishing

Instructions

Drain the soaked puffed rice by squeezing the extra moisture out and transfer to a plate.
Heat oil in a pan. Add mustard seeds,cumin seeds and sauté until the seeds splutter.
Add chopped onion,green chillies and curry leaves. Saute well till the onion turn translucent.
Add turmeric powder,coriander powder and salt to taste. Mix well.
Add the soaked puffed rice and sauté on low flame so that the rice gets coated well with all the ingredients.
Finally add lime juice and mix well. Transfer to a serving bowl and garnish with coriander leaves.
