Background
This simple radish pickle is an ideal condiment for burgers, sandwiches and wraps. If you want it to have a kick, add some grated ginger &/or some chopped chilli to it! It can be prepared well in advance - and it's also perfect for barbecues, picnics and trips.
Ingredients
- 1 bunch of radish
- 2 Tbsp white wine vinegar
- 1 Tbsp caster sugar
- Splash of water
- a pinch of salt
Instructions
- Trim, then finely slice the radishes.
- In a bowl mix together the vinegar and sugar. Add a spoonful of water.
- Add the radish slices, the salt (and the chilli /ginger if used) then toss well. Leave to marinate until needed, ideally minimum 30-60 minutes.
