Indian rice pudding

Background
This recipe for rice pudding is very simple and easy to make. It makes a very rich dessert with cashews and raisins in it. My mom makes it for special occasions like festivals, get togethers,etc.
Ingredients
- ½ cup Rice
- 1 litre Milk
- 1 Tbsp Clarified butter or ghee
- 1 Tbsp Cashews
- ½ Tbsp Raisins
- 3 Cardamom pods (powdered without the shell)
- ½ cup Sugar
- 1 Tbsp Jaggery
Instructions
- In a pan cook the rice in milk on a low heat with the lid on - regularly check the milk is sufficient, if not add some more until the rice is fully cooked.
- Add the jaggery, sugar and powdered cardamom and mix until the jaggery has melted.
- In a separate pan, heat ghee and add cashews and raisins and fry until the cashews are light brown and the raisins puff up.
- Add this to the rice cooked in milk.
- Serve either hot or cold.
