Background

This recipe for rice pudding is very simple and easy to make. It makes a very rich dessert with cashews and raisins in it. My mom makes it for special occasions like festivals, get togethers,etc.

Ingredients

½ cup Rice
1 litre Milk
1 Tbsp Clarified butter or ghee
1 Tbsp Cashews
½ Tbsp Raisins
3 Cardamom pods (powdered without the shell)
½ cup Sugar
1 Tbsp Jaggery

Instructions

In a pan cook the rice in milk on a low heat with the lid on - regularly check the milk is sufficient, if not add some more until the rice is fully cooked.
Add the jaggery, sugar and powdered cardamom and mix until the jaggery has melted.
In a separate pan, heat ghee and add cashews and raisins and fry until the cashews are light brown and the raisins puff up.
Add this to the rice cooked in milk.
Serve either hot or cold.
