Roasted tomatoes with shrimps
Background
During the Summer, on hot days Mediterranean flavours feel right - simple dishes that taste fantastic.Β The secret of these roasted tomatoes with shrimps is fresh, ripe tomatoes on the vine. Try to use uncooked shrimps (but pre- cleaned), they tastes better. Serve it with croutons, ciabatta or baguette.
Ingredients
- 200g tomatoes on the vine
- 150g fresh shrimps, peeled
- 2 cloves of garlic
- 2 Tbsp balsamic vinegar or white wine
- Lemon juice
- Ground pepper
- Fresh herbs to serve (parsley, basil etc)
- Olive oil
Instructions
- Preheat the oven to 180Β°C.
- Put the tomatoes on the vine in a baking dish.
- Cut the garlic into tiny pieces.
- Scatter the shrimps around the tomatoes, together with the garlic. Season to taste, then drizzle with balsamic vinegar or wine and some olive oil and a squeeze of lemon juice.
- Bake for about 15-20 minutes, until the shrimps turn pink and the tomatoes are tender.
- Scatter the fresh herbs on top, then serve.
