Background

During the Summer, on hot days Mediterranean flavours feel right - simple dishes that taste fantastic. The secret of these roasted tomatoes with shrimps is fresh, ripe tomatoes on the vine. Try to use uncooked shrimps (but pre- cleaned), they tastes better. Serve it with croutons, ciabatta or baguette.

Ingredients

200g tomatoes on the vine
150g fresh shrimps, peeled
2 cloves of garlic
2 Tbsp balsamic vinegar or white wine
Lemon juice
Ground pepper
Fresh herbs to serve (parsley, basil etc)
Olive oil

Instructions

Preheat the oven to 180°C.
Put the tomatoes on the vine in a baking dish.
Cut the garlic into tiny pieces.
Scatter the shrimps around the tomatoes, together with the garlic. Season to taste, then drizzle with balsamic vinegar or wine and some olive oil and a squeeze of lemon juice.
Bake for about 15-20 minutes, until the shrimps turn pink and the tomatoes are tender.
Scatter the fresh herbs on top, then serve.
