Salmon & Samphire pasta

Background
For a quick & easy lunch I highly recommend this delicious salmon & samphire pasta dish. It's also healthy, particularly if you use brown rice or other wholesome pasta. It's ready within 15 minutes and can be eaten warm or cold.
Ingredients
- 100g samphire
- 200g pasta (can be gluten-free)
- 2 salmon fillets
- Β½ red chilli, finely chopped, or ½ tsp dried chilli flakes
- 1 clove of garlic, chopped
- juice and zest of 1 lemon
- olive oil
Instructions
- Cook the pasta according to the instructions on the packaging. Add the samphire to the cooking water a minute before draining it.
- Meanwhile, heat a little oil in a frying pan. Season the fish and cook with skin side down for about 5 mins, then flip over and cook for another 3 minutes.
- Add the chilli flakes and garlic for the last minute of cooking. Fleck the salmon away from the skin.
- Toss the drained pasta & samphire with the fried salmon, chilli & garlic. Add the zest & juice of the lemon and season with salt & pepper.
- Serve warm.
