Sambar (Lentils with veggies)

Background
Sambar is the most famous south Indian dish and is very popular in every household. It can be made in many different ways. This recipe is just the basic and quick version of it. It goes very well with steamed rice.
Ingredients
- 1 Cup Toor dal (Split pigeon peas)
- 2 Cups Water
- ½ Onion (Roughly chopped)
- 1 Tomato (Chopped)
- 1 Green chilli
- 1 Cup chopped mixed veggies (carrot, moringa, bottle gourd, etc)
- 1 Tamarind - about the size of a lemon - soaked in warm water for 10 min
- 1 tsp Turmeric
- 1 Tbsp Sambar powder (ready made)
- 1 tsp Mustard seeds
- 1 tsp Fenugreek seeds
- A pinch asefotida
- 1 Red chilli
- Few curry leaves
- A sprig of coriander leaves chopped for garnishing
- Salt as required
- 1 tsp Oil
Instructions
- Pressure cook the toor dal along with the vegetables, green chilli and water.
- When the dal is cooked, put it on medium flame in a deep-bottomed vessel.
- Add the turmeric, tamarind water (squeeze and discard the tamarind), salt and sambar powder.
- Let the dal boil until it foams up.
- In a separate pan, heat oil on a medium flame, Add mustard seeds, fenugreek seeds, asafoetida, red chilli and curry leaves and let them splutter.
- Add this seasoning immediately to the dal.
- Remove the dal from the flame.
- Garnish with coriander leaves.
