Sausage with lentils

Background
This a perfect meal for a simple supper during the week or for a laid-back weekend brunch. It's ready in just half an hour.
Ingredients
- 1 Tbsp oil
- 450g sausages
- 1 red onion
- 1 clove of garlic, minced
- 1 pepper (red or yellow)
- 250g lentils (brown or green)
- 150 ml vegetable stock
- 1 glass of wine
Instructions
- Heat oil in a deep pan, fry the sausages until browned, then transfer to a plate.
- Meanwhile chop the onion and slice the pepper.
- Fry in the same pan the onion, garlic and pepper, for about 5 minutes until softened.
- Add the lentils and put the sausages back; pour over the stock and wine. Season to taste.
- Bring to the boil, then simmer for 20 minutes until the lentils and sausages are cooked.
Tips
