Sauteed fennel with green peas

Background
You can serve this sautéed fennel with green peas with pasta, rice, quinoa or toast. Alternatively it goes well with steam or grilled fish as a side dish. Add some chilli flakes for a spiced up version!
Ingredients
- 1 small fennel bulb
- 1 Tbsp olive oil
- 1 clove of garlic
- 6 spring onions
- 1 tsp fennel seeds
- Juice of 1 lemon
- Dash of white wine (optional)
- 100 ml vegetable stock
- 2 cups frozen green peas
- Salt and pepper
- 2 Tbsp fresh herbs of your choice (parsley, mint, dill etc)
Instructions
- Cut the fennel into long, thin slices.
- Heat the oil in a frying pan and gently sauté the fennel for about 8 minutes or until tender.
- Meanwhile, slice the garlic and spring onions. Add these to the fennel, together with the fennel seeds and stir for about a minute. Add the lemon juice and wine (if used) and let it sizzle for a minute or so.
- Add the stock, bring to the boil, cover and gently simmer for 10 minutes until the fennel has softened. Add the peas and cook for another 5 minutes.
- Add the herbs, season to taste and serve.
