Background
This Scandi slaw is a nice version of the coleslaw - it goes superbly with smoked fish, burgers, grilled fish & meat. Perfect for summer barbecues, picnics and for sandwiches all year round.
Ingredients
- 1 fennel bulb
- 1 Tbsp cider vinegar
- 4 radishes
- 40g gherkin
- ½ Tbsp grainy mustard
- 50 ml sour cream or kefir
- 1 Tbsp chopped dill
Instructions
- Thinly slice or shred the fennel into a serving dish. Pour over the vinegar, let it rest.
- Thinly slice the radishes and gherkins.
- Mix the mustard with sour cream/kefir.
- Mix the sliced vegetables with the spiced kefir and chopped dill. Season to taste.
