Background

This Scandi slaw is a nice version of the coleslaw - it goes superbly with smoked fish, burgers, grilled fish & meat. Perfect for summer barbecues, picnics and for sandwiches all year round.

Ingredients

1 fennel bulb
1 Tbsp cider vinegar
4 radishes
40g gherkin
½ Tbsp grainy mustard
50 ml sour cream or kefir
1 Tbsp chopped dill

Instructions

Thinly slice or shred the fennel into a serving dish. Pour over the vinegar, let it rest.
Thinly slice the radishes and gherkins.
Mix the mustard with sour cream/kefir.
Mix the sliced vegetables with the spiced kefir and chopped dill. Season to taste.
