Simple gluten-free cookies

Background
These gluten-free cookies are made with honey, not with sugar and even the egg can be left out. They are super-easy to make and the result is really soft and yummy - the perfect snack with your tea or coffee!
Ingredients
- Β½ cup rice flour
- 2 Tbsp soy flour
- Β½ tsp baking powder
- 2 Tbsp sunflower oil
- 1 egg (optional)
- 2 Tbsp honey
- Β½ tsp almond extract
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 180Β°C.
- Mix the oil, honey and extracts.
- In a larger bowl mix together the flour and baking powder, then add the liquid mixture. Mix and knead with your hands into a soft dough, then form tiny, about 3cm balls.
- Press down the balls between your palms and place them on a lined baking sheet and bake.
- Bake for 8-10 minutes or until golden brown. Cool them on wire rack.
