Simple thai prawn soup

Background
This simple Thai prawn soup is just amazing - spicy, zingy and it takes just 15 minutes to makes (10 of which is resting). Perfect on cold evening or at parties as a warm-up starter. Alternatively add some cooked rice noodles and you'll have a quick and light lunch or supper!
Ingredients
- 250g raw tiger prawns (shelled)
- 1 litre chicken soup
- 1-2 red chillies (deseeded and chopped )
- 1 Tbsp fish sauce
- 1 Tbsp soy sauce
- 1Tbsp lime zest
- 2 Tbsp lime juice
- A handful of coriander, chopped
- Salt and pepper
Instructions
- Rinse the prawns.
- Heat the chicken broth until boiling point. Add the chillies, fish & soy sauce, lime zest& juice. Cook for 3 minutes.
- Add the prawns, stir through, then put a lid on the pan and turn off the heat. Let it stand for 10 minutes until the prawns turn pink.
- Before serving, stir in the coriander.
