Sizzling salmon with spring onion

Background
This Chinese style sizzling salmon is served with spring onion and ginger. It's very quick and simple to cookΒ so it's a perfect laid-back meal. Serve with rice and stir-fried vegetables.
Ingredients
- 450g salmon fillets
- Β½ tsp salt
- Β½ tsp pepper
- Β½ litre water
- 3 Tbsp chopped spring onions
- 1 tsp chopped ginger
- 1Β½ tsp oil (groundnut)
- 2 tsp sesame oil
Instructions
- Rub the salmon fillets with salt and pepper.
- Boil the water in a pan, add the salmon and poach for 2-3 minutes, then turn off the heat and steam the fish under cover for about 5 minutes.
- In the meantime chop up the spring onion and ginger and mix them in a small bowl. Season with a little salt.
- Heat the oils in a wok (or frying pan) until smoky.
- Transfer the fish to serving plates, sprinkle with the ginger & spring onion mixture. Very carefully drizzle with the hot oil. Serve it sizzling.
