Background
Whether you need some sandwich spread or easy party nibbles topping try this zesty, smoked mackerel and feta spread. Itβs ready in just 5 minutes - no cooking required and itβs really yummy and healthy too! For a slightly sharper version, add some chopped spring onion.
Ingredients
- 1 smoked mackerel fillet
- 100g light cream cheese
- 100g feta cheese
- Grated zest of 1 lemon
- Dash of lemon juice
- 2 Tbsp chopped chives or dill
- Salt and pepper
- 2 spring onion, chopped (optional)
Instructions
- Skin the mackerel and check the fish for small bones. Flake the flesh into s a small bowl.
- Mix the cream cheese with the feta, using a fork, until you get a textured, thick paste. Add the lemon zest and juice, then combine. Fold in the fish, herbs and spring onion pieces (if used). Season to taste.
- Taste and adjust the seasoning, sharpness, lemon juice to your liking.
- Chill for at least 30 minutes before serving.
