Background
This smoked mackerel and avocado salad is perfect on those occasions when you need to create a quick, easy and healthy meal. It’s ready in just 10 minutes, it’s delicious and nutritious too! You can make it with any type of lettuce I used curly endive.
Ingredients
- 2 handfuls of lettuce of your choice
- ½ red onion
- 1 avocado
- 1 fillet of smoked mackerel
- 1 handful of cherry tomatoes
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- salt & pepper
Instructions
- Mix the oil and vinegar, then season with salt and pepper. Set aside.
- Rinse and dry the salad leaves, then scatter them onto a large serving platter or two plates.
- Add the tomatoes, halved if necessary.
- Finely slice the onion, add to the salad.
- Tear the mackerel into chunks and scatter over the salad.
- Peel and cut the avocado into thin wedges. Arrange these on top of the salad and drizzle with the dressing just before serving.
