Background

This smoked mackerel and avocado salad is perfect on those occasions when you need to create a quick, easy and healthy meal. It’s ready in just 10 minutes, it’s delicious and nutritious too! You can make it with any type of lettuce I used curly endive.

Ingredients

2 handfuls of lettuce of your choice
½ red onion
1 avocado
1 fillet of smoked mackerel
1 handful of cherry tomatoes
2 Tbsp olive oil
1 Tbsp balsamic vinegar
salt & pepper

Instructions

Mix the oil and vinegar, then season with salt and pepper. Set aside.
Rinse and dry the salad leaves, then scatter them onto a large serving platter or two plates.
Add the tomatoes, halved if necessary.
Finely slice the onion, add to the salad.
Tear the mackerel into chunks and scatter over the salad.
Peel and cut the avocado into thin wedges. Arrange these on top of the salad and drizzle with the dressing just before serving.
