Smoked salmon muffin

Background
I love savoury muffins because they are easy to make and so convenient for picnics, parties or just snacking. These delicate smoked salmon muffins go perfectly with a glass of bubbly when you have friends around for a little celebration.
Ingredients
- 300g flour
- 1 tsp baking powder
- Salt and pepper
- 4 Tbsp mayonnaise
- 1 large egg
- 75 ml oil or melted butter
- 200 ml milk or oat milk
- 2 Tbsp chopped dill
- 250g smoked salmon
Instructions
- Preheat the oven to 190°C .
- Mix the flour with the baking powder. Beat the eggs, mixed with the oil, mayonnaise, milk and dill.
- Chop the salmon coarsely, add to the mixture.
- Spoon the batter into lined muffin tin or silicon muffin cases.
- Bake the muffins in the oven for 20-25 minutes until they are golden brown.
- Cool them on a wire rack.
Tips
Make the muffins more healthy by using wholemeal flour andΒ Greek yogurt instead of mayo.© 2024 Copyright CookTogether
