Background

I love savoury muffins because they are easy to make and so convenient for picnics, parties or just snacking. These delicate smoked salmon muffins go perfectly with a glass of bubbly when you have friends around for a little celebration.

Ingredients

300g flour
1 tsp baking powder
Salt and pepper
4 Tbsp mayonnaise
1 large egg
75 ml oil or melted butter
200 ml milk or oat milk
2 Tbsp chopped dill
250g smoked salmon

Instructions

Preheat the oven to 190°C .
Mix the flour with the baking powder. Beat the eggs, mixed with the oil, mayonnaise, milk and dill.
Chop the salmon coarsely, add to the mixture.
Spoon the batter into lined muffin tin or silicon muffin cases.
Bake the muffins in the oven for 20-25 minutes until they are golden brown.
Cool them on a wire rack.

Tips

Make the muffins more healthy by using wholemeal flour and Greek yogurt instead of mayo.
