
Background
This Smoked trout and goat’s cheese salad makes a perfect starter at a dinner party - just served with some oatcakes or some fresh, wholesome rolls. Alternatively, serve it as a main course for a special lunch - particularly with a glass of bubbly! You can add some toasted walnuts or pine nuts if you like.
Ingredients
- 2 large handfuls of mixed salad leaves
- 2 smoked trout fillets
- 2 spring onions
- 50g soft goat’s cheese
- Juice of ½ lemon
- Drizzle of olive or walnut oil
- Freshly ground pepper
Instructions
- Scatter the salad leaves onto two plates.
- Tear the smoked trout into bite-sized pieces and arrange these on top of the salad leaves.
- Cut the spring onions into small slices, scatter these around the trout.
- Finally, just before serving, crumble the goat’s cheese all over the top, drizzle with oil & lemon juice then add plenty of freshly ground pepper.
