Spaghetti with courgetti and caramelised onion

If you’re on a diet, it’s really worth investing in a Spiraliser. It’s easy to use, allowing you to make simple and tasty dishes that help reduce your calorie intake. I love spaghetti with caramelised onion - but it’s quite calorific, mainly because of the pasta. In this recipe half of the spaghetti is substituted with courgetti, which has much less calories - I also used brown rice pasta, which is more healthy. I served my Spaghetti with courgetti and caramelised onion with goat’s cheese crumbled on the top - but if you’re after a vegan dish, or have dairy issues, just leave it out.
Ingredients
- 1 Tbsp olive oil
- 1 large red onion
- 1 garlic clove
- 100g spaghetti
- ¼ tsp dried crushed chillies
- 1 Tbsp balsamic vinegar
- 2 tsp honey
- 1 large courgette (or 1 x 250g pack courgette spaghetti)
- 50g soft goat’s cheese, crumbled (optional)
Instructions
- Thinly slice the onion and finely chop the garlic.
- Heat the olive oil in a pan and gently sauté the onion over low heat, stirring frequently, for about 10 minutes until soft. Add the garlic and cook for another 5 minutes or so.
- Meanwhile, cook the spaghetti according to the packet instructions. Drain, reserving 3 Tbsp of the cooking water. Return the pasta to the pan and cover.
- Using a spiraliser, shred the courgette into thin noodles.
- Add the dried chillies and vinegar to the softened onions and let it bubble for a minute. Stir in the honey and caramelise the onions. Add the courgette noodles, turn off the heat and gently combine. Cover and rest for a couple of minutes to allow the courgette to steam a bit.
- Add the onion and courgette mixture to the pasta, together with the reserved cooking water, then season to taste. Toss gently.
- Serve with goat’s cheese crumbled on top, if liked.
