Spiced apple and blueberry crumble
Background
Apple crumble is a classic autumnal pudding. This spiced apple and blueberry crumble is not only warming and filling, itβs vegan and gluten-free too if appropriate oats and flour are used. Serve it with plant-based or normal custard, yogurt, cream or ice-cream. Classic apple crumble>>
Ingredients
- 2 cooking apples
- 200g blueberries
- 1 handful walnut pieces
- Juice of Β½ lemon
- 2 tsp cinnamon
- 1 tsp ginger
- Β½ cup muscovado sugar
- 1 cup flour (gluten-free, if needed)
- 1 cup rolled oats (gluten-free, if needed)
- Β½ cup unrefined muscovado sugar
- Β½ cup ground walnuts
- 75g plant-based soft butter, margarine or spread
Instructions
- Preheat the oven to 180Β°C.
- Peel and core the apples, then chop them into bite-sized pieces. Arrange them into a lightly greased baking dish, then scatter the blueberries and walnuts around them.
- Squeeze the lemon juice on top, then dust with about half of the sugar and cinnamon.
- In a bowl, rub the margarine/spread with the flour, oats, ground walnuts, ginger and the remaining sugar & cinnamon until you get lumpy, sticky crumble. Add more butter/margarine if it feels too dry.
- Cover the fruits with the crumble, slightly pressing it down with the base of a spoon.
- Bake for about 20-25 minutes until golden.
- Serve warm.
