Spiced apple and pear crumble
Background
Crumble is probably the most versatile pudding - you can make it from most fruits and tweak it to be vegan, dairy-free, gluten-free, low-sugar or even sugar-free. Yet it’s still yummy and so easy to cook! This vegan spice apple and pear crumble is made with gluten-free flour and dairy-free margarine but you can use wheat flour or butter too. It’s a really comforting, relatively healthy dessert during the winter.
Ingredients
- 2 pears
- 1 large green apple
- Squeeze of lemon juice
- 2 Tbsp stem ginger in syrup, chopped
- 1 Tbsp muscovado sugar
- ½ tsp cinnamon powder
- For the crumble:
- 1 cup oat (gluten-free)
- ½ cup ground almond
- ½ cup gluten-free flour
- 50g dairy free margarine or butter
- 2 Tbsp muscovado sugar
- ½ tsp cinnamon
- ½ tsp ground ginger
Instructions
- Peel the apple and pears, then arrange them in a deep baking dish. Squeeze half a lemon over them. Scatter the ginger bits on top and dust with sugar and cinnamon.
- In a large bowl, mix the oat, flour, ground almond, ground cinnamon and ginger Add the margarine/butter (cubed) and rub with the mixture using your fingertips until you get a rough crumble. Mix in the sugar.
- Cover the fruits evenly with the crumble and, using the base of a spoon, press the mixture down slightly.
- Put the dish in the fridge for 15 minutes or until you’re ready to bake.
- Heat the oven to 180°C.
- Bake the crumble for 20-25 minutes until golden.
- Serve with (vegan) custard, yoghurt or ice-cream.
