Spiced gluten-free carrot waffles

Background
These spiced gluten-free carrot waffles are zingy and yummy - perfect for a weekend breakfast. Serve them with maple syrup or you favourite toppings. They are good for snacking during the day too!
Ingredients
- 1.5 cup gluten-free flour
- 1 tsp baking powder
- 2 eggs
- 1 cup milk (or plant-based milk)
- 1 tsp vanilla extract
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1 carrot, grated
- 1 handful raisins or sultanas
Instructions
- Put all ingredients, except the grated carrot and sultanas in a food processor and whiz until you get a smooth batter.
- Whiz for a few seconds and add more milk, if needed - the batter should be similar to single cream. Fold in the grated carrot and sultanas - now the batter should be a bit thicker but still pourable.
- Heat the waffle maker. Once itβs hot, spoon in some batter, let it spread out, then close the top. Following the machine instructions, cook the waffles for about 3-5 minutes - they should be golden and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
- Serve warm or at room temperature.
