Spiced grilled pineapple

Background
These spiced grilled pineapple slices finish off perfectly an Asian-style menu. It's very easy to make it, the syrupy glaze can be made in advance and reheated. Serve it with coconut or vanilla ice cream!
Ingredients
- ½ pineapple
- 1 red chilli
- 100g unrefined cane sugar
- 2½ cm ginger, grated
- 50 ml rum
- zest of half lime
- ½ Tbsp honey
Instructions
- De-seed and finely chop the chilli.
- In a heavy based saucepan warm up the rum, sugar, ginger, honey and chilli pieces. Stir for 1-2 minutes. When the sugar is melted and you get a syrup, turn off the heat.
- Remove the skin of the pineapple then core it. Cut the flesh into 1 cm thick slices.
- Grill, barbecue or fry them in a griddle pan until caramelized. Pour over the glaze and serve.
Tips
