Background
Hummus or houmous there are lots of ways to spell it but who cares because its delicious and so easy to make!Β This spiced houmous is a zingy, spicy version, that's perfect for parties and picnics. Serve it as a dip with some cruditΓ©s - or as a sauce for falafel or barbecued lamb skewers.
Ingredients
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tin chickpeas (400g)
- Juice of 1 lemon
- 2 Tbsp tahini
- 2 Tbsp olive oil
- 1 tsp chilli flakes
- 3 cloves garlic, minced
Instructions
- Crush the seeds coarsely with a pestle in a mortar.
- Drain the chickpeas, set aside a small handful for garnishing.
- Put the rest into a blender, add the lemon juice, oil, tahini, chilli, garlic and most of the crushed seeds. Season with salt and pepper, pulse, then add enough water for the paste to become thick and creamy.
- Transfer the paste a serving bowl, decorate with the reserved chickpeas and sprinkle with remaining crushed spices and a pinch of chilli flakes.
