Background
During the winter festivities itβs nice to have some home-made chutney in the fridge. This delicate, spiced kiwi chutney goes especially well with roast poultry and ham. Β Itβs an ideal Christmas gift to open on Boxing day or before New Year to finish off any leftover meat and cheese.
Ingredients
- 1 cup apple cider vinegar
- 1 cup muscovado or soft brown sugar
- 1 tsp salt
- Β½ tsp ground ginger
- 1 pinch of cayenne pepper
- Β½ cup onion, thinly sliced
- Β½ cup raisins
- Β½ lemon, zested
- 1.5 cup of chopped kiwi pieces
- 1 cup diced green apple pieces
- 1 clove of garlic, minced
Instructions
- Peel 6-8 kiwis and 2 green apples, then cut them into 1 cm pieces. Measure out 1 cup of apple pieces and 1.5 cup of kiwi.
- Put the vinegar, sugar, salt, ginger and cayenne pepper into a heavy-based pan. Bring to the boil, then simmer over low temperature until you get a thick syrup. Add the apple, onion, raisins and lemon zest. Cook for 10 minutes, then add the kiwi pieces, bring to a boil and turn off the stove. Put a lid on and allow to cool.
- When completely cool, spoon the chutney into sterilised jars.
