Spiced quinoa and chickpea salad

Background
This easy spiced quinoa and chickpea salad is ready within 15 minutes - even quicker if you’re using leftover, cooked quinoa. It’s healthy, low-carb, low-cal, gluten-free and vegan, so fits in most diets.
Ingredients
- 1 cup quinoa (white or mixed)
- 4 spring onions
- 1 Tbsp olive oil
- 1 garlic clove, minced
- 1 Lemon or lime juice
- 1 tsp ground cumin
- 1 tsp smoked paprika (or half/half cayenne)
- 1 tin chickpeas
- 1 small handful coriander leaves, chopped
- Salt & pepper
Instructions
- Cook the quinoa according to the packet instructions then cool. This can be done well ahead, but chill it until you’re ready to make the salad.
- Thinly slice the spring onions. Peel, then slice the avocado flesh.
- Put the quinoa in a mixing bowl, then add the olive oil, spices, lemon juice, spring onion & avocado pieces and the minced garlic.
- Rinse the chickpeas under water, drain, then add to the salad.
- Finally, add the coriander leaves then season with salt & pepper to your liking.
- Toss well, then serve.
