Background
This super-easy, zingy carrot salad accompanies middle-eastern food really well - so it's perfect in a kebab or flat bread with grilled/barbecued lamb or chicken. It can spice up a burger too! Β I make this regularly for barbecue parties.
Ingredients
- 1 chilli
- 50g almonds flakes
- 1 handful mint leaves
- 250g carrots
- 100g raisins
- Juice of half a lemon
- 1.5 Tbsp olive oil
- Salt and pepper
Instructions
- Dry-fry the almond flakes, set aside.
- Coarsely grate the carrots.
- De-seed the chilli, cut into thin slices. Chop the mint.
- In a serving bowl mix everything together, season with salt and pepper.
Tips
Leave the seeds &/or don't cut out the veins of the chilli if you want the salad to have a real kick to it!© 2024 Copyright CookTogether
