Spicy Cauliflower Stir Fry

Background
This spicy cauliflower stir-fry is wholesome, healthy and remarkably filling - just the thing if you're following a meat-free diet or if you want an interesting and tasty side dish. It also fits well in an Indian menu to share with friends and family. Best of all it takes less than Β½ an hour from start to finish!
Ingredients
- 90 ml vegetable oil (rapeseed/sunflower)
- a thumb-size piece of ginger (peeled & grated)
- 2 tsp turmeric
- 1 tsp chilli flakes
- 1 Tbsp cumin seeds
- 1 large cauliflower (broken into small florets)
- Freshly ground salt & pepper
- To garnish: a handful of freshly chopped coriander
Instructions
- Heat a large wok. Add the oil to the hot wok then, when it's smoking, stir-fry the spices and ginger for about a minute.
- Turn the flame down, then stir in the cauliflower and seasoning.
- Mix everything together well. Cover and cook for about 10 minutes, stirring every couple of minutes.
- When the cauliflower has softened it's ready to serve. Garnish with the fresh coriander.
