Spicy Kerala chicken curry

Background
There are many different varieties of chicken curry recipes in India using different spices giving a subtly different taste to each one of them.Β This spicy Kerlala chicken curry is very delicious and easy to make.
Ingredients
- 600g Chicken meat, cut into small pieces
- For the marinade:
- 1 tsp Ginger garlic paste
- 1 tsp Turmeric
- 1 tsp Chilli powder
- 2 tsp Coriander powder
- 1 tsp Cumin powder
- 1 tsp Pepper powder
- Salt as required
- For cooking:
- 2 Onions, sliced thinly
- 2 Tomatoes, ground to paste
- 1 Tbsp Oil
- ½ tsp Ginger garlic paste
- ½ tsp Turmeric
- ½ tsp Chilli powder
- 1 tsp Coriander powder
- ½ tsp Cumin powder
- ½ tsp Pepper powder
- Salt as required
- ½ cup Water
- 1 Green chilli
- A sprig of curry leaves
- 1 Dried red chilli
- Coriander leaves to serve
Instructions
- Mix the ingredients for the marinade, coat the chick with this and let it marinate for ½ hour.
- Boil chicken with ½ cup water in a vessel until it is ¾ cooked.
- In a deep bottomed vessel, heat oil and fry the chicken pieces until they are fully cooked, setting aside the chicken stock.
- Set aside the fried chicken pieces.
- In the same vessel, fry the onion until brown.
- Add green chilli, red chilli and curry leaves then stir.
- Add all other powdered spices and mix.
- Add the tomato paste and fry until oil oozes out.
- Add salt and the chicken stock and bring to the boil.
- Add the chicken pieces and cook under low temperature for a couple of minutes.
- Garnish with some coriander leaves.
