Background
For an interesting variation on a traditional Sunday lunch or dinner party centre-piece, why not try this Spicy Roast Pork Leg? The rub ingredients permeate deep into the meat and vegetables giving them a splendidly rich, exotic flavour - while the smell as it's cooking is wonderful!
Ingredients
- 1.5kg pork roasting joint
- For the spice rub:
- ½ tsp chilli powder
- 1 Tbsp paprika
- 1 Tbsp ground cumin
- 1 Tbsp Italian herb mix
- For under the joint:
- 250g mushrooms, sliced
- 500g new potatoes, roughly chopped
- 2 onions, chopped
- 4 garlic cloves, chopped
- 3 Tbsp olive oil
- Freshly ground salt and pepper
Instructions
- Preheat the oven to 200°C
- Mix the rub elements well together and put into a large freezer bag. Pop in the pork and tie the top. Give a good shake and rub the mix all over the joint.
- Spread the mushrooms, potatoes, onion and garlic over the bottom of a medium-large roasting tin. Drizzle over the olive oil, season and coat all vegetables well.
- Put the joint onto the vegetables and tuck them around it.
- Roast for about two hours, basting and turning occasionally.
- Serve with seasonal green vegetables.
