Background

For an interesting variation on a traditional Sunday lunch or dinner party centre-piece, why not try this Spicy Roast Pork Leg? The rub ingredients permeate deep into the meat and vegetables giving them a splendidly rich, exotic flavour - while the smell as it's cooking is wonderful!

Ingredients

1.5kg pork roasting joint
For the spice rub:
½ tsp chilli powder
1 Tbsp paprika
1 Tbsp ground cumin
1 Tbsp Italian herb mix
For under the joint:
250g mushrooms, sliced
500g new potatoes, roughly chopped
2 onions, chopped
4 garlic cloves, chopped
3 Tbsp olive oil
Freshly ground salt and pepper

Instructions

Preheat the oven to 200°C
Mix the rub elements well together and put into a large freezer bag. Pop in the pork and tie the top. Give a good shake and rub the mix all over the joint.
Spread the mushrooms, potatoes, onion and garlic over the bottom of a medium-large roasting tin. Drizzle over the olive oil, season and coat all vegetables well.
Put the joint onto the vegetables and tuck them around it.
Roast for about two hours, basting and turning occasionally.
Serve with seasonal green vegetables.
