Spicy Spinach, Leek & Chickpea Soup

Background
This Spicy Spinach, Leek & Chickpea Soup is really delicious yet incredibly quick to get on the table - just 15 minutes from start to finish! It's based on a recipe an Indian friend showed me so I suppose it's actually a fusion rather than an Asian dish..
Ingredients
- 3 tsp olive oil
- 6 cloves finely chopped garlic
- 1½ tsp finely chopped green chillies
- ½ leek finely chopped
- 125g chopped spinach
- 1 tin chickpeas
- 1 litre vegetable stock
- 1½ tsp dried oregano
- juice of 1 lemon
- seasoning
Instructions
- Heat a pan and put in the oil.
- Add the garlic, chillies and leek. Stir over a medium heat for a couple of minutes.
- Add the stock, chickpeas, oregano, lemon juice and seasoning, then continue stirring for another couple of minutes.
- Add the spinach, turn off the heat and put a lid on. Rest for 3 minutes.
- Serve with chunky bread or naan.
Tips
- Remove the seeds and vein from the chilli if you don't want it too spicy.
- Leave them in or add a second chilli if you do like it spicy!
