Background

This Spicy Spinach, Leek & Chickpea Soup is really delicious yet incredibly quick to get on the table - just 15 minutes from start to finish! It's based on a recipe an Indian friend showed me so I suppose it's actually a fusion rather than an Asian dish..

Ingredients

3 tsp olive oil
6 cloves finely chopped garlic
1½ tsp finely chopped green chillies
½ leek finely chopped
125g chopped spinach
1 tin chickpeas
1 litre vegetable stock
1½ tsp dried oregano
juice of 1 lemon
seasoning

Instructions

Heat a pan and put in the oil.
Add the garlic, chillies and leek. Stir over a medium heat for a couple of minutes.
Add the stock, chickpeas, oregano, lemon juice and seasoning, then continue stirring for another couple of minutes.
Add the spinach, turn off the heat and put a lid on. Rest for 3 minutes.
Serve with chunky bread or naan.

Tips

Remove the seeds and vein from the chilli if you don't want it too spicy.
Leave them in or add a second chilli if you do like it spicy!
