Background
Thisย Spicy turkey stir fry is based on one I saw Ken Hom do on television years ago. It's really delicious - so quick & simple to do if you are familiar with using a wok - and, of course, a wok really is a must if you have any interest in developing yourย Chinese culinaryย skills.
Ingredients
- 600g turkey breast fillet
- 1ยฝ Tbsp groundnut oil
- 1 Tbsp chopped ginger
- 2 Tbsp chopped garlic
- 3 Tbsp stock
- 2 Tbsp sweet chilli sauce
- 1 Tbsp soy sauce
- 2 tsp sugar
- To garnish: 1 Tbsp sesame oil
- 1 handful basil or Thai basil leaves, chopped
Instructions
- Cut the turkey breasts into thin (1cm) strips.
- Heat the wok and, when well heated, add the oil.
- When the oil smokes, put in the garlic and ginger.
- Stir-fry for half a minute then add the turkey strips and stir-fry for 2 minutes.
- Pour in the broth, then add the bean sauce (and sugar if used). Cook for 5 minutes.
- Finally add the sesame oil and the basil leaves.
- Serve hot.
