Spinach and feta omelette

Background
This spinach and feta omelette is a quick & easy meal, perfect for a brunch or light lunch. Serve it with a crusty or wholesome bread and perhaps a green salad. I've made this several times with soft goats cheese and that's really nice too!
Ingredients
- 3 small eggs
- 1 knob of butter
- 1 pinch of chilli flakes
- 50g crumbled feta cheese
- 1 large handful of spinach
Instructions
- Lightly beat the eggs with three pinches of salt.
- Heat the butter in a non-stick frying pan and pour in the egg. Tilt the pan, allowing the egg to spread around.
- When the omelette is almost cooked through, crumble the cheese sprinkle it all over with the chilli flakes. Add the spinach to one half of the omlette and, using a spatula, fold the other half over it.
- Cook over a lower heat for a few seconds until the spinach starts wilting.
- Slide it to a plate and serve warm.
