
Background
This spinach raita is an ideal condiment for hot, spicy Indian dishes or as a dip with poppadoms and naan bread. I also like using it as a filler sauce with Middle-eastern style grilled meat, wrapped in flatbread or pita.
Ingredients
- 1.5 tsp of ghee or vegetable oil
- 1 clove of garlic
- 1 tsp cumin
- 100g baby spinach
- 100 ml yoghurt (Greek or similar)
- Sweet paprika
Instructions
- Heat the oil in a saucepan and fry the garlic and cumin for a minute or two until fragrant.
- Add the spinach and cook for a further couple of minutes. When the spinach is just wilted, take it off the heat, let it cool and then mix with the yogurt.
- Sprinkle with paprika before serving.
